Vegetarian tomato sauce

Ingredients for 2 servings:

  • 1 can of tomatoes, chopped
  • 2 tsp tomato paste
  • 1 m.-sized onion(s)
  • some oil (sunflower oil)
  • n. B. herbal salt
  • n. B. Pfeffer
  • e.g. cayenne pepper
  • n. B. herbs, Italian

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Dice the onion and fry it in a pan with sunflower oil until translucent. Deglaze with the chopped tomatoes and stir, continuing to simmer so the liquid evaporates and the flavor intensifies. Now stir in the tomato paste and add plenty (!) of the various herbs and spices (be careful with the cayenne pepper and adjust the spice level to your personal preference). I always buy my Italian herbs dried for this sauce. I recommend preparing this sauce about 15 minutes before cooking the pasta—it tastes much better when left to stand.
