Nectarine curd

Ingredients for 4 servings:

  • 500 g low-fat curd cheese
  • 1 tbsp sugar
  • 5 large nectarines
  • 100 ml milk, low-fat
  • possibly muesli or cornflakes

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Wash and pit the nectarines. Cut three of them into pieces and then puree them. I leave the skin on, but you can peel them if you like. In a bowl, mix the quark with milk and fruit puree until smooth, then season the cream with sugar. Cut the remaining nectarines into small pieces and fold in. Let the dessert sit in the refrigerator for a while and enjoy chilled. In hot weather, this quark often replaces lunch; we then add it to muesli or cornflakes.
