Ingredients for 4 servings:
- 4 nectarines
- 50 g sugar
- some lemon juice
- 1 dl orange juice
- some butter, to grease the mold
- 1 dl cream
- 2 egg yolks
- 1 packet of vanilla sugar (Bourbon)
- 2 tbsp pistachios or almonds
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 24 minutes
Can be prepared well.
Briefly place the nectarines in boiling water, peel, halve, and remove the stones. Melt the sugar with a little lemon juice over low heat until light caramel. Deglaze with the orange juice and cook briefly, stirring, until the caramel has dissolved. Add the nectarine halves and let stand for 5 minutes. Remove and score them fan-shaped so that they still hold together. Place in several small or one large buttered gratin dish. Mix the cream with the egg yolk, vanilla sugar, and orange juice well and pour over the nectarines. Bake in an oven preheated to 225°C (425°F) on the grill setting or using top heat in the upper third for 3-4 minutes. Sprinkle with chopped pistachios or almonds, if desired, and serve while still warm.
