Stuffed figs with Sbrinz

Ingredients for 4 servings:

  • 8 figs
  • 40 g cheese (Sbrinz)
  • 50 g almond(s), grated
  • 1 tbsp cream
  • 1 pinch(s) of sugar
  • 1 fig(s) (for the filling)
  • 4 tbsp wine, Banyuls (alternatively red port wine)
  • 2 tbsp pine nuts (alternatively almond flakes)
  • salt and pepper
  • some butter for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Butter a baking dish. Preheat the oven to 180 degrees Celsius. Make deep cross-shaped cuts in 8 figs. Purée the remaining figs along with the Sbrinz, almonds, cream, and a pinch of sugar. Season the mixture with salt and pepper and spread it among the figs. Place the figs in the baking dish and drizzle with the Banyuls. Let the figs warm in the oven for about 8-10 minutes; the mixture should develop a slight crust. Do not leave it in the oven for too long, or the figs will become mushy. Meanwhile, toast the pine nuts (or almonds) in a pan without butter. Arrange two figs on each plate, sprinkle with pine nuts, and serve warm.
