Nectarine jam with ginger and lime

Ingredients for 1 servings:

  • 880 g nectarine(s), ripe, (weighed peeled), cut into thin slices
  • 120 g water
  • 30 g candied ginger, cut into tiny cubes
  • 1 lime(s), grated zest and juice
  • 750 g gelling sugar 2:1

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Fruity jam, exotically spiced – makes 4 jars of approx. 250 ml each

Combine the nectarines, ginger, and water in a large saucepan, bring to a boil, and simmer covered until the nectarines are soft. Chop finely or coarsely using a hand blender or whisk. Add the lime zest and juice, along with 500g of the preserving sugar, bring to a boil, and simmer for 1 minute. Add the remaining preserving sugar, bring back to a boil, and simmer gently until the jam has set (approx. 2 minutes). Pour into the prepared jars, seal immediately, and let the jam cool upside down for the first 10 minutes.
