Nectarine Raclette

Ingredients for 4 servings:

  • 2 large nectarines
  • 200 g crème fraîche
  • 2 eggs, fresh, including the yolk
  • 1 tsp powdered sugar

Preheat the raclette. Wash, halve, and pit the nectarines. Quarter each half and place 4 wedges each in a raclette pan. Pour the crème fraîche into a bowl, stir in the egg yolks and powdered sugar. Pre-cook the nectarines in the raclette for about 5 minutes, then pour the sauce over them and let them set for another 5-10 minutes. Variations: This raclette also tastes great with quartered apricots, stewed peach slices, or red wine plums. You can also marinate the fruit beforehand in alcohol, such as peach liqueur, orange liqueur, or plum brandy. If desired, you can also stir 2 tablespoons of ground almonds into the crème fraîche and sprinkle the dish with chopped pistachios.
