No Bake Cheesecake – Quark cake without baking

Ingredients for 1 servings:

  • 200 g oat biscuits
  • 100 g butter, melted
  • 250 ml cream
  • 500 g quark (cottage cheese)
  • 1 sachet of cream stiffener or 1 sachet of instant gelatin

Basic recipe

Line a cake tin with baking paper; pre-cut baking paper for an air fryer is also ideal for this. Crumble the biscuits for the base. Mix with the melted butter. Pour the mixture into a 26cm cake tin and press down firmly. Tip: You can use different biscuits and also vary the flavor of the base, e.g., with rum flavoring, cinnamon, cocoa, etc. Whip the cream until stiff. Mix the curd cheese with the cream. Season the mixture to taste. Add instant gelatin or cream stabilizer to the mixture to ensure everything is nice and firm. Tip: The flavor of the mixture can be varied endlessly, e.g., with flavor drops, desiccated coconut, egg liqueur (approx. 100 ml), protein shake powder, or melted and cooled chocolate (approx. 200 g). Adjust the instant gelatin for liquid ingredients! Spread the mixture over the base and refrigerate for about 1 day. Alternatively: A fruit mirror is quick to make and is a great alternative for fruit lovers. Puree 1 large can of fruit of your choice, mix it with gelatin, and spread it over the cake. Of course, you can also top the cake with a thin layer of chocolate. Melt 200g of chocolate, let it cool slightly, and spread it over the mixture. Note: This is a quick cheesecake recipe that can be made in endless variations. This recipe is intentionally sugar-free or without sweeteners, as the mixture requires little to no additional sweetening due to the variety of options. If using sugar, use powdered sugar, depending on your personal taste.
