Noodle soup with smoked salmon

Ingredients for 4 servings:

  • 500 g smoked salmon
  • 400 g pasta (fine vermicelli or star-shaped pasta)
  • 2 carrots
  • 3 potatoes
  • 1 stalk(s) leek
  • celery
  • Parsley
  • salt and pepper
  • 1 liter broth / stock (vegetable or chicken broth)
  • Clarified butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the meat into small cubes and fry lightly in clarified butter (do not let it brown). Peel the potatoes and carrots, cut them into small pieces, add them to the meat, and braise briefly. Slice the leek into rings and add them, along with a piece of celery (if you like). Braise for another 1 to 2 minutes, then add the stock and simmer gently for a maximum of 8 to 10 minutes (the vegetables should definitely still be firm to the bite). Meanwhile, cook the pasta (slightly less time than the package instructions), drain, and add it at the end of the cooking time. Season with salt and pepper, add chopped parsley, and the soup is ready.
