Ingredients for 2 servings:

  • 500 g pasta or spaetzle, cooked, even from the day before or ready-made product
  • 120 g smoked streaky bacon
  • 2 shallots
  • ½ clove(s) garlic
  • 1 tbsp clarified butter
  • ½ tsp herbs de Provence
  • 4 tomatoes, pickled in oil, recipe in the database
  • possibly black pepper, freshly ground
  • possibly sweet paprika powder

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the pasta/spätzle fresh or according to the package instructions, drain, and allow to drain or evaporate in a sieve. Dice the bacon (approx. 5 mm). Finely slice the shallots. Slice or grate the garlic very finely. Cut the pickled tomatoes into thin strips. Briefly fry the pasta in clarified butter over medium heat, add the diced bacon and shallots, and stir frequently. Once everything has taken on some color, add the finely chopped garlic and tomato strips. Season with the herbs de Provence, pepper, and paprika, if desired, and stir again to ensure everything is well mixed. Can be served as a side dish or as a main course. Tip: If you have them, definitely replace the dried herbs with fresh ones!
