North German Pancakes with Three Kinds of Fruit

The perfect north german pancakes with three kinds of fruit recipe with a picture and simple step-by-step instructions.

  • 175 g Flour
  • 3 tbsp Sugar
  • 1,5 tsp Baking powder
  • 350 ml Buttermilk
  • 2 Pc. Eggs
  • 1 tsp Vanilla extract
  • 0,5 tsp Salt
  • 20 g Powdered sugar
  • 100 g Blueberries
  • 200 g Apples
  • 100 g Fresh raspberries
  • 5 Pc. Chocolate truffle
  1. Put the flour, sugar, baking powder, vanilla extract and salt in a medium-sized bowl and make a well in the center. Put melted butter and beaten eggs as well as buttermilk into the well and stir everything well (e.g. with a fork).
  2. Peel the apples, remove the core, cut into eighths and cut them again into about 1 cm pieces. Prepare the blueberries.
  3. Heat about 1 teaspoon of oil in a large pan and use a ladle or large salad spoon to add 3 pieces of pancake batter to the pan. Caution, the dough will enlarge and should not touch each other if possible. As soon as bubbles form on the dough, add 1 handful of apples and blueberries to the 3 doughs. Turn the pancakes and let them brown on the other side as well. Keep warm in the oven while the rest of the pancakes are baked.
  4. Serve all pancakes warm on a breakfast plate, for example, sprinkle lightly with powdered sugar and garnish all around with the cold raspberries and also with a cold truffle.
