Mashed potatoes with meatballs and fresh vegetables

  1. Crush the rolls into breadcrumbs in a blender. Mix together with the minced meat, egg, onion and mustard. Then season with marjoram, salt and pepper. Shape meatballs and fry in the pan on both sides. Brown the remaining minced meat for the Bolognese the next day so that it does not spoil.
  2. Boil potatoes. Then add butter, salt, pepper and nutmeg and mash. At will: butter for the taste. Saving tip: Instead of milk, add about 250 ml of the water in which the potatoes were boiled. Then mash to the desired consistency. The remaining mashed potatoes are processed into potato soup on day 3.
  3. 2 Zucchini, 5 carrots and 2 leeks, lightly fry in a pan with a breeze of spices. Add 1 tbsp butter for good taste. Reduce remaining vegetable peel and leftovers to vegetable stock for the next day. Simply take a pot of water, boil the vegetables in it for a long time, season a little.

Pancakes with applesauce

  1. Mix the flour, milk, eggs, sugar and salt into a smooth dough. Then bake the pancakes in the pan. Heat 6 apples with a little apple juice and sugar for 20 minutes and serve with the pancakes.

Vegetable soup with pancake strips and Bolognese

  1. As an addition to the soup: cut yesterday’s pancakes into strips. Fish the vegetables and broth out of yesterday’s pot at will. Caution: save about 6 pancakes for tomorrow. Sear the minced meat from the previous day with 2-3 tomatoes and 2 glasses of strained tomatoes, reduce to Bolognese sauce. To do this, pound the meatballs into small pieces and put them in the blender if necessary.

Potato soup

  1. Create a potato soup from the mashed potatoes from day one – by stretching with the remains of the clear broth. Simply add fried vegetables and mash. If the soup is too thin: stir in about 3 tablespoons of puree flakes per liter. If the soup is too salty: grate in raw potatoes and cook with them.

Pancake Lasagna

  1. Pancake lasagna is the ideal, cheap and homemade leftover product. In a round cake tin, stack the pancakes and Bolognese sauce alternately, like with lasagna. Put a little more cheese between each layer, then place in the preheated oven for 20-30 minutes. Finished!
