Norwegian salmon pan

Ingredients for 2 servings:

  • 1 stalk(s) leek
  • 1 pack of frozen salmon (good eaters can use 2 packs)
  • 125 g crab or shrimp
  • 1 small can of tomatoes
  • 2 cloves garlic, not too small
  • ½ cup sweet cream
  • salt and pepper
  • Sugar
  • lemon juice
  • Parsley, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Thaw the salmon, rinse thoroughly, dry, and marinate for 15 minutes with lemon juice. Add the canned tomatoes with their juice and cream to a pan or wide saucepan. Finely slice the cleaned leek, mince the garlic, and mix everything with the tomatoes and cream. Season well with salt and pepper, add a little sugar, and simmer for 10 minutes. Dry the salmon and cut into bite-sized pieces. Add to the tomato and vegetable mixture, season with salt and pepper, and simmer for another 15 minutes. Stir in the crab and heat through. Transfer the fish pan to a serving dish and sprinkle with parsley. Serve with rice or baguette, but pasta is also delicious. If you prefer a thicker sauce, stir in a little thickener at the end.
