with walnuts, chopped hazelnuts, almonds, also with sunflower seeds (pine nuts or mixtures) possible
Sprinkle the sugar into a pan so that the bottom is completely covered (enough sugar so that the nuts are completely submerged) and heat until it melts. Now add the chopped nuts, almonds, or sunflower seeds and stir. Remove from the heat immediately as soon as everything sizzles or foams golden yellow, otherwise the sugar will quickly turn too dark. The sugar generates a lot of heat when melting, so be careful: don’t be tempted to taste it. Allow everything to cool completely in the pan. Then heat the pan again briefly; this will make the finished mixture (glassy, candy-like, hard mass) very easy to separate. The base will melt, and you can simply pour the pan out like a pancake. Break into bite-sized pieces and snack to your heart’s content. If you only want to caramelize the nuts, almonds, etc., use significantly less sugar so that only a wafer-thin coating of liquid sugar forms around the nuts, preventing them from sticking together. The principle, however, is the same.
