Ingredients for 10 servings:
- 300 ml milk
- 30 g yeast, fresh
- 1 tsp sugar
- 500 g flour
- 1 ½ tsp salt
- 75 g butter, softened, plus butter for the mold
- 50 g hazelnuts
- 175 dark chocolate
- 150 g hazelnut nougat, cold
- 120 g butter, cold
- 1 tsp oil, neutral

For the yeast dough, warm the milk to lukewarm. Crumble the yeast and stir into the milk with the sugar. Mix the flour and salt, add the butter and yeast milk. Using the dough hook of a hand mixer, knead until smooth. Cover and let rise in a warm place for 30 minutes. For the filling, preheat oven to 200°C (180°C fan oven). Roughly chop the hazelnuts, spread them on a baking tray and roast them in the hot oven on the second rack from the bottom for 10-15 minutes until browned. Let cool. Thoroughly brush a loaf pan (30 cm Ø) with softened butter and chill. Roughly chop the chocolate. Finely dice the nougat and butter and chill. Briefly knead the dough. Roll out the dough on a floured work surface to a size of 45 x 35 cm. Arrange the nougat and butter cubes on top. Sprinkle 100g of chocolate into the gaps. Cut the dough crosswise into 6 roughly equal-width strips. Carefully overlap the strips of dough. Then cut into 4 equal-width pieces. Place the pieces upright, one behind the other, in the loaf pan. Place the last piece with the ungreased dough side toward the side of the pan so the filling doesn’t stick to the pan. Let it rise in a warm place for 30 minutes. Reduce the oven temperature to 180°C (160°C fan oven). Bake the pull-apart bread in a hot oven on a wire rack on the second shelf from the bottom for 35 minutes. After 20 minutes, cover with a piece of baking paper. Let the bread cool in the pan for 15 minutes, then carefully remove it from the pan. Melt the remaining chocolate and oil in a metal bowl over a pan of hot water. Place the bread on a platter and drizzle with the chocolate. Sprinkle with hazelnuts and serve lukewarm. 542 kcal per serving.
