Ingredients for 1 servings:

  • 300 g flour
  • 1 tsp baking powder
  • 130 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 130 g butter, soft
  • Fat and flour for the tray
  • 6 tbsp apricot jam
  • 200 g butter
  • 5 tbsp water or rum
  • 200 g brown sugar
  • 1 packet of vanilla sugar
  • 400 g hazelnuts, ground, or walnuts or almonds
  • 200 g chocolate glaze

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 35 minutes

Make a dough from the dough ingredients. The dough is relatively soft, so it can be spread evenly on the baking sheet. Butter the bottom of a drip tray and dust with flour. Alternatively, place a baking frame in the baking sheet. Press the dough evenly into the dough (I always do this by hand; a rolling pin doesn’t work so well). Spread the jam thinly over the dough. Melt the butter, water, sugar, and vanilla sugar in a saucepan (do not boil) until the sugar dissolves. Add the ground nuts or almonds and mix well. (I use a mix of nuts from my pantry.) Spread the nut mixture evenly over the jam. Bake in an oven preheated to 175°C (top/bottom heat) for about 30-35 minutes (mine is on the middle rack). Let it cool on the baking sheet, preferably overnight, and cut into squares the next day. Dip either just the tips or the sides into the chocolate coating. The brown sugar in the nut mixture gives the nut corners a light caramel flavor.
