Ingredients for 1 servings:

  • 5 egg yolks
  • 1 egg(s)
  • 300 g sugar
  • 300 g hazelnuts or other nuts, ground
  • 90 wafers

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Preheat the oven to 150°C (top/bottom heat), line baking sheets with parchment paper. Whisk the egg yolks, egg, and sugar until frothy, then stir in the nuts. Using two teaspoons, scoop out small dumplings, place them on the wafers, and bake for about 20 minutes. The macaroons will then have a wafer-thin crispy coating on the outside and be beautifully soft on the inside.
