Ingredients for 1 servings:
- 8 m.-large egg whites
- 500 g powdered sugar
- 2 lemons, untreated
- 250 g hazelnuts
- 200 g almonds
- 50 g pine nuts
- Baking wafers, round, 5 cm diameter
- Pine nuts for decoration
Instructions
Working time approx. 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 25 minutes; Total time approx. 3 hours 55 minutes
Beat the egg whites until stiff peaks form. Add the powdered sugar and continue beating until a thick mixture forms. Grind the hazelnuts, almonds, and pine nuts. Then mix with the grated zest of 2 lemons and fold into the egg white and powdered sugar mixture. Using 2 teaspoons or a piping bag, place small mounds of the mixture onto the wafers and decorate with pine nuts. Let dry in a quiet place for 3-4 hours, then bake for 15-25 minutes at 120°C.
