Nutella-Mascarpone cake with cherries

Ingredients for 1 servings:

  • 4 eggs
  • 300 g flour
  • 200 g sugar
  • 225 ml oil
  • 3 tbsp cocoa
  • 1 packet of baking powder
  • 1 packet of vanilla sugar
  • 150 ml milk
  • 8 tbsp, heaped Nutella
  • 500 g mascarpone
  • 600 ml cream
  • 2 cream stiffener
  • 1 large jar of morello cherries
  • 200 g dark chocolate coating

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Combine the eggs, flour, sugar, oil, cocoa, baking powder, and vanilla sugar and mix to a smooth batter. Spread on a baking tray and bake at 180°C (top/bottom heat) for about 20 minutes. Soak the hot base with the milk. Whip 400ml of cream with the cream stiffener until stiff. Mix the Nutella and mascarpone until smooth. Fold in the cream. Drain the cherries well and spread them on the cooled base. Spread the mascarpone cream on top. Heat the remaining cream with the chocolate coating and let it cool. Only then spread it on the cream. Tip: The quantities are for one baking tray. Halve accordingly for a springform pan.
