Ingredients for 4 servings:
- 375 g flour (wholemeal or wheat flour)
- 1 ½ tsp baking powder
- 1 pinch of salt
- 4 eggs
- 360 ml oat milk (oat drink)
- 1 banana(s)
- 1 apple
- 1 ½ tsp vanilla sugar
- 150 g sugar
- 170 g butter or margarine, soft
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
First, measure out all the ingredients and gather them together (this makes things less stressful). Puree the banana and mix it with the oat milk. If using butter, cut it into pieces. Separate the eggs. Beat the egg whites until stiff peaks and set aside. Beat the egg yolks with the sugar and vanilla sugar on high until fluffy. Gradually add the butter/margarine to the egg yolk mixture and continue beating briefly. Combine the flour, baking powder, and salt. Alternate the flour mixture with the banana-oat milk into the egg mixture, stirring constantly until a smooth batter forms. Finally, carefully and completely fold in the egg whites. Cut the apple into thin slices and set aside. Now bake the waffles as usual in the waffle iron. Before closing the waffle iron, place 2-3 apple slices on the batter. Bake for 2-3 minutes, trying not to stack them on top of each other to keep them crispy. If you like them soft, stack them! Makes about 20 heart-shaped waffles, or about 10 American-style waffles. Serving suggestion: Top with Nutella and lightly sprinkle with powdered sugar.
