Oat cookies

Ingredients for 1 servings:

  • 200 g oat flakes
  • 175 g cornstarch
  • 100 g powdered sugar
  • 1 pinch(s) vanilla, ground
  • 2 tbsp psyllium husks
  • 250 g margarine, vegan
  • 400 g dark chocolate

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 5 minutes

Blend the oats into flour in a mixer. If you don’t have powdered sugar, add the sugar to the mixer and blend on high until powdered. Add the psyllium husks and vanilla. Add the softened or liquid margarine and knead into a dough. Wrap the dough in plastic wrap and refrigerate for 30 minutes. Rub the work surface and rolling pin with cornstarch and roll out the dough to a thickness of about 0.5 cm. Cut out the cookies and place them on a baking sheet lined with baking paper. Bake the cookies in the oven at 160°C for about 15 minutes until golden brown. This batter is enough for two baking sheets. Melt the chocolate in a double boiler and decorate the cookies with it as desired.
