Ingredients for 5 servings:
- 500 g pork strips
- 1 onion(s)
- 1 garlic clove(s)
- 4 slice(s) pineapple, fresh, or a small can of pineapple pieces
- 400 ml coconut milk
- ½ tsp sambal oelek
- 3 tsp curry powder, depending on strength and taste
- Salt
- 2 dashes soy sauce, light
- 3 tbsp oil for frying
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Heat the oil in a large pan and sear the pork strips. If the pan isn’t hot enough, the pork will leak water and become dry. Add the diced onions and press in the garlic clove. Continue to fry the meat. Sprinkle everything with the curry and fry it for a while. Then add half a teaspoon of sambal oelek and stir in the sliced pineapple rings. Pour in the coconut milk and continue simmering. Season with salt and soy sauce. Add more curry to taste. I recommend serving it with rice as a side dish.
