Oat cookies – oat biscuits

Ingredients for 1 servings:

  • 120 g butter
  • 120 g sugar
  • 1 egg(s)
  • 1 pinch of salt
  • 90 g oat flakes
  • 80 g almond(s), ground
  • 80 g flour
  • 1 tsp baking powder
  • 1 pinch of cinnamon

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

not too unhealthy, simple, delicious!

Cream the softened butter with sugar and egg (using a whisk) until fluffy. Mix the remaining ingredients separately, then gradually add them to the butter mixture. Don’t worry, it will form more of a paste than a smooth dough! Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper. Scoop out some dough with a spoon, form small balls with your hand, and place them well apart on the prepared baking sheet. (Approx. 10-14 balls per baking sheet). Bake on the middle rack for about 12-15 minutes. Remove from the oven when the edges are visibly browned. Carefully remove the still-soft cookies from the baking sheet and let them cool. I think they taste best fresh and still soft in the center, but they also survive very well in a freezer bag! (As long as there’s no Cookie Monster in the family…)
