Ingredients for 4 servings:

  • 200 g oat flakes
  • 100 g spelt flour
  • 1 tsp baking powder
  • 150 g brown sugar
  • 1 pinch of salt
  • 125 g margarine or butter
  • 2 tbsp applesauce
  • ½ tsp cinnamon powder, optional
  • 1 tsp vanilla extract, optional
  • Chocolate drops, optional

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Mix all dry ingredients together in a bowl. Add margarine and applesauce and knead into a dough. Optionally, add cinnamon and/or vanilla extract or chocolate chips. Shape the dough into balls with 2 teaspoons, place them on a baking sheet lined with baking paper or foil, and flatten with moistened hands. Bake the cookies at 160°C (convection oven) for about 10-15 minutes. The thinner and darker the cookies, the crispier they will be.
