Oatmeal almond cookies with apple

Ingredients for 1 servings:

  • 100 g spelt flour (wholemeal)
  • 70 g almond(s), ground
  • 40 g almond(s), chopped roasted
  • 30 g oat flakes
  • 55 g sugar
  • 1 packet of vanilla sugar
  • 80 g butter, melted
  • 1 small apple or 1/2 large apple
  • 1 egg(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel, core, and grate the apple. Knead all ingredients together. Using 2 teaspoons, place small mounds of dough onto a baking sheet and bake at 170°C (fan oven) for 12-15 minutes, until crisp and brown. The cookies are not too sweet and have a light apple flavor; if you want something a little sweeter, you can add more sugar. Toss the apples with a little cinnamon beforehand, if desired; of course, you can also use a little more apple. If desired, you can also toast the oats slightly beforehand.
