Oatmeal baguette with yogurt

Ingredients for 3 servings:

  • 350 g flour, 550s
  • 100 g wholemeal spelt flour
  • 1 cube of fresh yeast, 42 g
  • 1 tsp sugar
  • 200 ml water
  • 2 tsp salt
  • 150 g natural yogurt
  • 100 g oat flakes
  • 50 g muesli, mixed, without sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 25 minutes; Total time approx. 2 hours 45 minutes

I prepare the dough in a Kitchen Aid. I add all the ingredients to the bowl at once, crumbling only the yeast but not dissolving it. Mix thoroughly, first on low speed, then for about 5 minutes on high. Cover the dough and let it rise for about 2 hours, then divide it into 3 portions, roll them into long baguettes and score them. Let it rise for another 30 minutes under a kitchen towel, then bake in a preheated oven at 200°C (top/bottom heat) for about 25 minutes. You can also moisten the loaves and sprinkle them with oats (or pumpkin seeds or sunflower seeds). You can also omit the muesli mix and increase the amount of oats. They taste best fresh with jam, but also very good with chicken liver pâté.
