Oatmeal bread

Ingredients for 1 servings:

  • 500 g flour (wheat flour)
  • 75 g oat flakes, wholemeal
  • 8 g salt
  • 5 g sugar
  • 200 ml water, lukewarm
  • 100 ml milk, lukewarm
  • 20 g butter, soft
  • 15 g yeast, fresh

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Dissolve the yeast in the lukewarm water and add the salt. Set the jar aside for about 30 minutes. Then combine all the remaining ingredients in a bowl, add the yeast, salt, and water, and mix everything thoroughly. (You should knead the dough vigorously for at least 5 minutes; 7-10 minutes is best.) Cover the dough and let it rest in a warm place for at least 60 minutes. (The dough will be quite sticky, but this is completely normal, so please do not add any more flour.) The dough can also be made in a bread maker! After resting, knead the dough again briefly as thoroughly as possible. Now place the dough in a loaf pan or special bread pan and let it rise, covered, for at least another 45 minutes. After rising, place the pan in the preheated oven and bake at 200°C (top/bottom heat). After about 10 minutes, reduce the temperature to 180°C (350°F) and bake for about another 40 minutes. The oats taste particularly good in bread if they’re briefly toasted in a pan without oil beforehand. This gives them a delicate, nutty flavor. The oatmeal bread is very light and stays fresh for a long time, and the oats give it a special flavor. The bread can also be made entirely in a bread maker.
