Ingredients for 1 servings:

  • 1 kg flour, 550s
  • 1 cube of yeast, or 2 bags of dried yeast
  • 700 g buttermilk
  • 1 tsp honey
  • 150 g oat flakes, wholegrain
  • 4 tsp salt

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour 40 minutes; Cooking/baking time approx. 1 hour; Total time approx. 3 hours

Knead all ingredients into a smooth, supple dough and let it rest for 30 minutes. Then, on a floured surface, knead the dough vigorously until it no longer sticks, then cover and let it rise for 60 minutes. Shape into a round loaf and dust with flour. Cover and let the loaf rise again for 10 minutes. Score the loaf immediately before baking. Bake at 250°C for 15 minutes, steam 3 times at 200°C for 45 minutes.
