Ingredients for 1 servings:

  • 140 g oat flakes, fine
  • 60 g oat flakes, wholegrain
  • 30 g nuts, mixed, chopped
  • 80 g cranberries
  • 10 dried apricots
  • 3 tbsp raisins
  • 30 g almonds, ground
  • 1 apple
  • 1 banana(s)
  • 1 ½ tsp gingerbread spice
  • ¼ tsp vanilla
  • 400 ml almond milk
  • Coconut oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Preheat the oven to 180°C (top/bottom heat). Chop the dried apricots into small pieces. Peel the apple and cut it into small pieces. Peel and cut the banana. In a large bowl, thoroughly mix the oats, ground almonds, mixed nuts, and spices. In a second bowl, combine all the dried fruit, berries, apple, and banana pieces and mix well. Add the mixed fruit to the oat mix and stir thoroughly. Finally, mix everything with the almond milk. Lightly grease a baking pan with coconut oil. Pour the oat mix into the baking pan, spread it evenly, and press it down firmly. Bake the oat and fruit cake in the oven for 40 minutes and then let it cool slightly before serving.
