Ingredients for 1 servings:

  • 200 g butter
  • 250 g brown rock sugar
  • 500 g oat flakes, wholegrain
  • 3 eggs
  • 50 g flour
  • 75 g almonds, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Heat the butter in a pan. Add the chopped almonds and oats to the butter in the pan and mix for about 3-5 minutes. In a bowl, stir together the sugar, flour, and eggs until there are no lumps (you can also use a knife, spoon, or fork). Now add the oatmeal-butter mixture and knead with your hands (it’s quite sticky, and the dough will still be a bit crumbly). Then, using two teaspoons, place about 75-90 cookies onto a baking sheet lined with parchment paper. Bake at 160-180°C (convection oven) for about 15 minutes. Then let cool on a baking sheet.
