Ingredients for 1 servings:

  • 125 g butter, soft
  • 125 g sugar
  • 2 eggs, separated
  • 250 g oat flakes (from Kölln)
  • 50 g almond(s), ground
  • 1 tsp baking powder
  • some lemon(s) – zest, grated
  • 1 egg yolk

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

enough for about 40 pieces

First, beat the softened butter, sugar, and two egg yolks until fluffy. Then add the oats, almonds, baking powder, and grated lemon zest and mix well. Finally, beat the egg whites until stiff peaks form and fold them into the batter. Shape the dough into round cookies and place them on a baking sheet lined with baking paper. Beat the remaining egg yolk and brush the cookies with it. Bake in a preheated oven at 190°C for about 15 minutes. Tip: The ground almonds can also be replaced with ground hazelnuts or desiccated coconut.
