Oatmeal cookies without butter

Ingredients for 1 servings:

  • 500 g coarse oat flakes
  • 3 tbsp, heaped flour
  • 125 g currants or raisins
  • 5 m.-sized eggs
  • 225 g sugar
  • 3 packets of vanilla sugar
  • 3 pinches of salt
  • 3 drops of bitter almond flavor

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Preheat the oven to 190-200°C (top/bottom heat). Combine the oats, flour, and currants in a bowl. Beat the eggs with sugar, vanilla sugar, salt, and bitter almond flavoring in a large mixing bowl with a mixer for about 3 minutes until frothy. Add the dry ingredients to the egg mixture and mix well with a spoon. Using a teaspoon, place small mounds of dough onto the baking paper, flatten slightly, and bake for 10-12 minutes. Then, let the cookies cool slightly on the baking sheet, otherwise they will break.
