Oatmeal Pancakes

Ingredients for 8 servings:

  • 2 eggs
  • ¼ liter of milk
  • 1 tbsp powdered sugar, heaped
  • 1 packet of vanilla sugar
  • ¼ tsp salt
  • 125 g oat flakes (melted flakes)
  • ½ tsp baking powder
  • Clarified butter, for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine eggs, milk, powdered sugar, vanilla sugar, and salt with a hand mixer. Mix in the instant pudding flakes and baking powder and stir in. Cook about eight, not too thin, pancakes, each about 8 cm in diameter, one after the other in the hot clarified butter. Serve warm. Best enjoyed with maple syrup or jam.
