Ingredients for 4 servings:

  • 2 cups of milk, maybe a little more
  • 2 eggs
  • ½ cup oil
  • 1 cup flour
  • 1 ½ cups oatmeal
  • 2 tbsp sugar
  • 2 ½ tsp baking powder
  • 1 tsp salt
  • some maple syrup or jam (as needed)

Working time approx. 35 minutes; Rest time approx. 20 minutes; Total time approx. 55 minutes

Pancake recipe from Canada

Combine the flour, baking powder, oats, sugar, and salt and stir to combine. Add the milk, eggs, and oil and let stand (the oats absorb the liquid over time, which makes the pancakes so fluffy). Depending on your needs and the type of oats, you may need a little more milk. Let it rest for about 15-20 minutes. After the resting time, fry the pancakes in batches in a pan until golden brown. Maple syrup works best, but jam also tastes good. Tip: Depending on how quickly you need to cook, you can start frying after just 5 minutes, but in my experience, it tastes better if you wait at least 15-20 minutes. This recipe was brought back to me from Canada and was originally designed for “red Canadian cups.” One cup holds about 250 ml of water, if you want to measure it with a measuring cup. I also like to make a baking mix from all the dry ingredients and then, when I have visitors or need something quick, I just have to add milk, eggs and oil.
