Ingredients for 1 servings:
- 150 g margarine, vegan
- 225 g brown sugar
- 1 bag of vanilla sugar
- 150 g flour
- ¾ bag(s) of baking powder
- 200 g oat flakes
- 200 g raisins
- 1 pinch of salt
- 3 tbsp apricot jam, vegan
Instructions
Working time approx. 20 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes
vegan, Christmassy, simple
Using a hand mixer, cream the margarine and sugar in a bowl until creamy. Add the vanilla sugar and apricot jam and mix briefly again. Combine the flour, salt, and baking powder, then gradually mix into the margarine and sugar mixture. Fold in the oats and raisins with a spoon. The result will be sticky and relatively firm. Form small portions (about 1 tbsp) onto a baking sheet and flatten slightly with a fork. Leave some space between the cookies; they will rise slightly. Bake in a preheated oven at 150°C (fan oven) for about 15 minutes. They may still be very soft. Don’t be fooled. Remove from the oven and let cool on the baking sheet for 5 minutes; they will become even harder. Super delicious, simple, and just happen to be vegan. Delicious not just at Christmas!
