Ingredients for 2 servings:

  • 200 g cheese (Handkäs/Harzer)
  • 1 small onion(s), red
  • 40 g butter
  • 1 tbsp sour cream
  • n. B. Salt
  • Pepper, freshly ground
  • 2 tbsp apple cider
  • 1 tbsp chives, in rolls

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with Handkäs (Harzer)

Finely dice the cheese and finely chop the onion. Mix the cheese, diced onion, butter, sour cream, apple cider, chives, and seasonings well. If the cheese is still very firm, you can warm the cubes in the oven at 50 degrees Celsius (122 degrees Fahrenheit) to make them more pliable and easier to mix. It goes wonderfully with fresh farmhouse bread.
