Ingredients for 4 servings:

  • 400 g bacon, thinly sliced
  • 1 large onion(s)
  • 100 g leek
  • 2 gherkins
  • 100 g sour cream
  • Pepper, from the mill
  • Paprika, sweet or hot

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

A hearty spread made from bacon, onions and leeks

Cut the bacon into strips and then dice or chop as finely as possible. Finely dice the onion, halve the leek lengthwise, wash it, then halve it again lengthwise and then cut it crosswise into very fine strips. Finely dice the gherkins. Mix everything together and season with freshly ground pepper. Finally, stir in the sour cream and mix everything well. Let it sit in the fridge for at least 1 hour. Spread a thick layer of Saukäs on one slice of farmhouse bread per person and sprinkle with paprika. I first ate this Saukäs 45 years ago at my mother-in-law’s. Back then it only consisted of bacon, leek, and onions. Since that was a bit too dry for me, I added mayonnaise back then, but today I add sour cream and gherkins.
