Okra Indian style

Ingredients for 4 servings:

  • 750 g okra
  • 1 ½ liters of water
  • 30 g butter or margarine
  • 40 g onion(s)
  • 10 g red pepper(s)
  • 1 ½ tbsp curry powder
  • ½ lemon(s), juice
  • 1 pinch(s) of sugar
  • 90 g cream, approx. 6 tbsp

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Trim the okra and wash thoroughly under cold water, trimming the stems. Bring a pot of salted water to a boil, add the okra, and simmer in a covered pan for about 15 minutes. Transfer to a sieve and drain. Heat butter in a pot and sauté the chopped onion for about 3 minutes. Rinse the bell pepper, remove the seeds, and finely chop. Add it to a pot with the okra. Season with salt, curry powder, lemon juice, and sugar. Stir in the cream, and you’re done!
