Old Berlin dill sauce

Ingredients for 1 servings:

  • 250 ml dry white wine
  • 250 ml sweet cream
  • 2 tbsp butter
  • 2 tsp flour
  • 1 egg yolk
  • salt and pepper
  • lemon juice
  • lots of dill, chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Beat the butter and flour with a whisk over low heat until golden brown. Pour in the wine, then the cream, and bring to a gentle boil. Add the egg yolk, beaten with lemon juice, to the slightly cooled sauce. Just before serving, stir in plenty of fresh, finely chopped dill.
