Old Silesian white bread

Ingredients for 1 servings:

  • 1 kg flour (type 550)
  • 500 ml buttermilk, lukewarm
  • 100 ml water, lukewarm
  • 1 ½ tbsp salt
  • 1 tbsp honey
  • 1 tbsp vinegar essence
  • 1 cube of yeast

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Crumble the yeast into a large bowl and mix with the honey. Add lukewarm water, buttermilk, salt, and vinegar. Add the flour and knead until a smooth dough forms (the amount of flour can vary by +/- 150 g). Cover the dough and let it rise for a good half hour, until it has doubled in size. Shape the dough into 3 loaves, place them on a prepared baking sheet, and let them rise for another 30 minutes. Place in a preheated oven at 200°C (top/bottom heat) (no fan!). After 20 minutes of baking, reduce the temperature to 160°C. The bread needs about 45-50 minutes in the oven.
