Ingredients for 1 servings:

  • 250 g olives, green, pitted, small, 2 bags of 125 g each
  • 50 g Pecorino, grated
  • 50 g almonds, ground
  • 4 tbsp extra virgin olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Place the grated pecorino and ground almonds in a small bowl, then add 4 tablespoons of extra virgin olive oil and mix well. Pour half of the liquid from one bag of olives into a blender. Drain the olives from one bag in a sieve and blend them with the liquid in a blender for 10 seconds. Add the olives from the other bag without any liquid and blend for about 20 seconds until a light green mixture forms. Mix the blended olives with the previously blended almonds and cheese in a bowl with a spoon.
