Olive paste with green olives

Ingredients for 1 servings:

  • 100 g green olives, pitted
  • 1 tsp honey
  • 1 dashes lemon juice
  • 2 tbsp olive oil
  • some lemon pepper or pepper with lemon zest
  • 1 garlic clove(s) or a little more
  • 1 pinch of chili flakes
  • 1 pinch of salt

Quick to make, easy to prepare

Drain the olives well, peel the garlic, and roughly chop it. If you have fresh organic lemons, use a little lemon zest and freshly ground pepper instead of the lemon pepper. Puree all ingredients in a tall container with a hand blender. Let it sit in the refrigerator for a few hours, preferably overnight. It’s best to add the spices and garlic carefully at first, then taste and adjust the seasoning once or twice during the cooling period. The paste will keep in a screw-top jar in the refrigerator for about a week. It’s suitable as a spread, for party snacks, on white bread as a snack with wine or beer, for buffets, etc. The specified quantities of ingredients yield approximately 150g of paste.
