Ingredients for 6 servings:

  • 4 potatoes
  • 2 carrots
  • 2 eggs
  • 1 onion(s) or chives
  • ½ cucumber(s) or 2 pickled gherkins or pickled cucumbers
  • 150 g poultry sausage
  • 3 tbsp mayonnaise
  • 3 tbsp olive oil
  • 1 dashes lemon juice
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 50 minutes

Russian mixed salad

Boil the potatoes and carrots with their skins on until soft. Hard-boil the eggs as well. This can be done in the same pot; the eggs just need to be taken out earlier. Let everything cool and peel. Then cut the potatoes, carrots, eggs, cucumber, and sausage into approximately 1 cm cubes. Put everything in a bowl. Cut the onion into very small cubes and add to the rest. For the dressing, mix the mayonnaise, olive oil, lemon, salt, and pepper and pour over the salad. Mix everything thoroughly and refrigerate, ideally in a sealed container. The salad can also be eaten immediately. Alternatively, you can use chives instead of the onion; then the salad tastes less bitter. The salad is perfect for preparing for parties.
