  • Clarified butter to bake
  • 1 Chopped onion
  • 2 tbsp Chopped parsley
  • 300 g Fresh chanterelles
  • 2 tbsp Clarified butter
  • Salt + pepper

Instructions
 

  • Preheat the oven to 100 ° C to keep it warm
  • Clean the chanterelles and cut them into small pieces if necessary
  • Heat the butter lard, sauté the onion and parsley briefly, then add the mushrooms, cook over a medium heat for 5-10 minutes, possibly keep warm for a short time
  • For the omelets, heat a small, shallow pan with a little clarified butter. Whisk the eggs with salt and flour and fry 4 omelets one after the other. Fill the omelets with the mushrooms as soon as possible, fold them up and serve.
