Ingredients for 2 servings:
- 4 large eggs, fresh and at room temperature
- 1 tbsp crème fraîche
- 100 g goat’s cheese
- Savory or mountain mint (Sarriette)
- salt and pepper
- 3 tbsp olive oil, cold squeezed

Omelette with chèvre and sarriette
Lightly whisk the eggs with the crème fraîche, season with salt and pepper. Heat the olive oil in a large pan, add the eggs, and let them set for about 2 minutes over medium heat. Crumble the goat cheese over the omelet and sprinkle with some lightly grated savory or calamari. Reduce the heat, cover, and let the omelet set for about 4 minutes over low heat. Serve with fresh baguette or pain de campagne. Serve with a green salad or a few tomato slices.
