Omelette with smoked salmon

Ingredients for 2 servings:

  • 4 large eggs, fresh and at room temperature
  • 1 tbsp crème fraîche
  • 5 tbsp olive oil, cold squeezed
  • 150 g salmon, smoked and cut into fine strips.
  • some chives, cut into small rolls
  • Salt and pepper, black from the mill

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Beat the eggs in a bowl with the crème fraîche, salt, and pepper. Heat the olive oil in a large pan, add the egg mixture, and let it set over medium heat for about 2 minutes. Spread the salmon on the omelet and sprinkle with the chives. Reduce the heat, cover, and let the omelet set over low heat for about 4 minutes. Serve folded on a platter with a green salad. Serve with fresh baguette or pain de campagne.
