Ingredients for 1 servings:

  • 500 g unsalted butter
  • 500 g milk chocolate for cooking
  • 500 g biscuits, broken
  • 250 g nuts, mixed, roasted and finely chopped
  • 1 tsp vanilla extract

Instructions

Working time approx. 5 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 5 minutes

Scottish biscuit cake

Melt the butter and chocolate and stir well. Line a 25cm x 37cm baking pan with butter paper, mix the cookies with the nuts and vanilla extract, and sprinkle over the mixture. Top with the butter-chocolate mixture. Smooth and refrigerate. Serve cut into finger-sized pieces.
