One Pan Kritharaki Chicken Pan

Ingredients for 4 servings:

  • 1 tbsp oil
  • 1 onion(s), diced
  • 3 garlic cloves, chopped
  • 480 ml chicken broth
  • 250 g Kritharaki (rice-shaped noodles)
  • 400 g tomatoes, peeled, from the can
  • 1 tbsp Italian herbs
  • 400 g chicken strips
  • salt and pepper
  • chili powder
  • Parmesan, optional

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Heat the oil in a large pan and sauté the onion. Once the onions are translucent, add the chicken and brown on all sides, then season with salt, pepper, and chili. Add the garlic and fry briefly. Then add the kritharaki and toast briefly. Deglaze everything with the tomatoes and chicken stock. Bring the dish to a boil, cover, and simmer over medium heat for about 12-15 minutes, or until the kritharaki are cooked. Then season to taste. If you like, you can also add spinach or broccoli to the pan; they also taste delicious. If you like, add a little Parmesan cheese.
