One Pot Broccoli Cashew Rice with Turkey

Ingredients for 2 servings:

  • 80 g rice
  • 100 g broccoli
  • 150 turkey meat
  • 20 g cashew nuts, unsalted
  • 1 shallot(s)
  • 1 clove(s) garlic
  • 220 ml vegetable stock
  • Soy sauce
  • Garam Masala
  • Thyme
  • salt and pepper
  • chili

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Sauté the rice with the broccoli (cut into florets), the finely diced garlic, and the shallots. Deglaze with the vegetable stock. Simmer until the rice is almost cooked. Finely chop the turkey. Remove the pot from the heat and add the turkey to the vegetable-rice broth. Let it simmer. Season with spices and herbs. Stir in the finely chopped cashews. Tip: If you like, you can roast the cashews in a pan beforehand. The type of meat, vegetables, and nuts, as well as the spices and herbs, can be varied according to taste.
