Ingredients for 2 servings:

  • 200 g beluga lentils
  • 2 tbsp lemon juice
  • salt and pepper
  • some oil

Instructions

Working time approx. 45 minutes; Rest period approx. 3 days; Cooking/baking time approx. 20 minutes; Total time approx. 3 days 1 hour 5 minutes

Grow your own sprouts

Soak the lentils overnight. Rinse the lentils thoroughly and place them in a large glass container with a glass lid. Let them germinate for about 3 days. Rinse and drain the sprouts twice a day. Puree the sprouts thoroughly in a blender. Season with lemon juice, salt, and pepper. Heat a little oil in a non-stick pan until slightly hot, then add 3-4 portions of lentils with a tablespoon and smooth the mixture. Lightly brown the fritters on both sides. Serve with herb curd or crème fraîche.
