One-Pot Mac & Cheese

Ingredients for 4 servings:

  • 400 g macaroni
  • 75 g Gouda, grated
  • 75 g Cheddar cheese, grated
  • 1 liter of milk
  • 400 ml cream
  • 2 cloves garlic
  • 1 tsp turmeric
  • 1 tsp nutmeg
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Peel and mince the garlic. Heat the milk and cream in a saucepan over medium-high heat for about 2 minutes. Add the macaroni, garlic, and grated turmeric and stir in. Add about 1 teaspoon of nutmeg (freshly grated or from a shaker) to the pan and season with salt and pepper. Bring the mixture to a boil, then simmer for 10-15 minutes (or until the pasta is al dente), stirring frequently. Add the grated Gouda and Cheddar cheese and mix with the cooked macaroni. Season again with salt and pepper.
